Baking the perfect chocolate chip cookie: our step-by-step guide

The Monks had a sweet tooth and being the extraordinary flavor adventurers they are desired something soft that would mix well with their chocolate. They took a trip to Whitman, Massachusetts and met with the renowned Ruth Wakefield of the Toll House Inn. She provided Horacio, having the knack for baking; as he was a rigid time keeper and followed instructions to a T, with the most delicious cookie recipe.

Horacio went to work recreating using the following recipe. Horacio struggled to determine which of the chocolate flavors would best compliment such a beautiful cookie and asked the bolder seasoner, Hugo for his recommendation. "Hole Mole!" Hugo exclaimed. "With its savory front and spicy finish, Holy Mole would offer the greatest cookie eating experience, in my humble opinion."

So here you go the most delicious chocolate chip cookie recipe using Holy Mole chocolate.


Ingredients

  • 2 1/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 cup (2 sticks) butter, softened

  • 3/4 cup granulated sugar

  • 3/4 cup packed brown sugar

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • 2 cups or 12 oz of Holy Mole chocolate cut into chunks



  1. Preheat oven to 375 degrees F. Line a baking pan with parchment paper and set aside.

  2. In a separate bowl mix flour, baking soda, salt, baking powder. Set aside.

  3. Cream together butter and sugars until combined.

  4. Beat in eggs and vanilla until fluffy.

  5. Mix in the dry ingredients until combined.

  6. Add 12 oz package of chocolate chips and mix well.

  7. Roll 2-3 TBS (depending on how large you like your cookies) of dough at a time into balls and place them evenly spaced on your prepared cookie sheets. (alternately, use a small cookie scoop to make your cookies).

  8. Bake in preheated oven for approximately 8-10 minutes or until golden brown.

  9. Let them sit on the baking pan for 2 minutes before removing to cooling rack.
